Preheat a griddle or other pan to the point where water beads on the surface.

Combine the rice flour and other dry ingredients in a bowl. In another bowl, combine the sour cream and eggs.

Pour the sour cream and eggs over the dry ingredients and mix just until moist. Fold in the apples.

Melt the butter on the griddle, and use a ? cup scoop to measure out the pancake batter. Cook it on the griddle until it turns a golden brown, then flip it to cook other side. Serve with butter and pure maple syrup for breakfast. This recipe makes 12 pancakes.
