Start in google with the main keyword and do a little research on the topic to see what people are talking about. Type the word into google's search and wait a second. Several long tail versions will show up.
Now take all the keywords you've acquired and search for them in Google's Keyword Tool. Make sure you click the Exact button on the left hand side to get the search volume for the specific term. Take a look at the amount of volume for the searches, and see what looks like a good keyword.
Do a search for the term in Google, and compare the competition that's ranking in the top 10, especially the top 3. Are these pages you can outrank? If so then keep those keywords and work with them. If the competition is too high, it generally isn't worth the effort for a simple niche site.
