For centuries, wine is being used in cooking.
There is evidence that ancient Greeks and Romans used wine as an integral part of their cooking.
It was these two ancient civilizations that should be credited for spreading this technique of cooking throughout Europe.
The French, the connoisseurs of fine wine, have been using wine in preparing food from the Middle Ages, while the English started using it in the 18th century.
One of the first recipe books highlighting the use of wine was published in 1739 in England.
Through the book one could make soups using wine, fricassee, veal, roast of venison and hog meat pie.
The English colonists who settled in America were instrumental in introducing sherry, port and Madeira to Colonial America.
At that time there was no rule about what type of wine should be drank with what type of food.
Today, wine is used in cooking in the French way.
It is basically used to enhance flavor and texture of the food prepared.
Here are some tips on how to use wine for cooking: -Always use good quality wine for food preparation.
A bad quality wine will spoil your dish instead of enhancing the taste and flavor.
It will lend a bitter or sour taste to the food prepared.
-Do not use cooking wine that is usually available in stores.
You will be better of cooking your food without wine rather than using this pre-salted wine.
-You should consider wine to be a spice.
A red wine will impart color and dry quality to the food, while a white wine will impart an acidic quality to the food.
-When you heat wine, it will first lose its alcohol content.
Therefore, if you want the alcohol to reduce in the food, you will have to cook it longer.
However, make sure that there is sufficient liquid in the food, or else the flavor will change dramatically.
-If you use a fruity wine, you will have a fruit taste in the food prepared.
While a sweet wine will impart a sweet taste.
However, the so-called cooking wine will make the food salty because it has added salt.
-Usually wine is used to deglaze a pan.
In order words, it wine is used as a base when making sauces.
-Invariably the wine is added towards the end of the food preparation.
The good thing about using wine to prepare different sauces and meats dishes is that you can experiment to find out how different wines impart different flavors, tastes and aromas.
