Raw foodists, vegetarians, and healthy eaters of all types love peppers.
Especially the deliciously color varied bell peppers.
The fact that they come in four different colors means far more than helping you create a beautiful dish that is pleasing to the eye.
Those colors also indicate a wide variety of nutritional properties.
This is a huge benefit if you can fit them all on to your plate.
One of the more simple but wise pieces of nutritional wisdom I've ever heard is that the more colors you have on your plate the better.
This is because the nutritional constituents that create those different colors are all different and beneficial in their own ways.
And those constituents are so numerous and varied, that scientists are still discovering them and how they interact with each other and our bodies.
So as a general rule of thumb, if you can look at your plate and see a rainbow of colors, that's a pretty good sign that your meal is carrying a decently wide nutritional profile.
So back to the bell peppers.
They show up in nature in green, red, yellow, and orange.
While the red, yellow, and orange are on the more expensive side, they also pack quite a nutritional punch.
Peppers also can be white, purple, or even rainbow colored if between ripening stages.
All the different colored peppers come from the same seed.
The colors themselves represent different stages in the ripening process.
That's why yellow, orange, and red peppers are more expensive.
They were on the plant longer.
Peppers that are left longer on the vine also tend to be sweeter and more nutrient dense.
So if you are growing your own, leave them a little longer before harvesting them if you can.
It is said that a large red pepper has triple the amount of Vitamin C than your average orange.
Who knew? Red peppers are also super high in Vitamin A.
And even though red peppers pack more Vitamin C than, say, green peppers, that doesn't mean green peppers aren't good.
The Bell Pepper in general provides lots of antioxidants, and supports and strengthens the cardiovascular system.
It also supports healthy lungs.
However, they are a member of the nightshade family which doesn't agree with some people.
Keep in mind, that bell peppers are a member of "The Dirty Dozen.
